Fluffy gingerbread pancakes
For two servings:
4 eggs
1 cup high-protein Greek yogurt (240 ml / 250 g)
2 – 4 teaspoons maple syrup
1 teaspoon vanilla extract
2/3 cup all purpose (gluten-free) flour (160 ml)
2 teaspoons baking powder
1 teaspoon gingerbread spice mix

1. Mix the wet ingredients together
2. Add the dry ingredients and stir to combine. If you are using wheat flour instead of gluten-free flour, you might need to add a bit more since gluten-free flour mixes absorb more of the liquid
3. Cook on a non-stick pan for a few minutes on each side

Gluten-free Pizza Crust:

Ingredients for two pizzas:
1 1/2 cup water (3.6 dl)
11 g dry yeast (4 teaspoons)
2 teaspoons maple syrup/honey
1/2 – 1 teaspoon salt (to taste)
2 cups all purpose gluten-free flour mix that contains psyllium husk (4.8 dl)
2 tablespoons olive oil

1. Heat the water in the microwave till 42 Celsius degrees / 108°F (or according to your yeast package). Mix the yeast with the water
2. Add maple syrup and salt and stir
3. Add half of the flour and mix with a mixer for 2 minutes
4. Add rest of the flour and mix for 2 more minutes
5. Lastly add the olive oil and mix for 1 minute
6. Divide into two parts
7. Roll into round shapes
8. Let rise for 30 minutes
9. Add your toppings
10. Bake at 220 C / 430 F without fan or at 200 C / 390 F with fan for about 15-20 minutes

Healthier Bagels

Ingredients for 4 bagels:
1 cup all purpose (gluten-free) flour (240 ml)
2 teaspoons baking powder
pinch of salt
1 cup full fat Greek yogurt (240 ml / 250 g)
add only if using gluten-free flour: 1 egg white

toppings:
egg wash
optional: sesame seeds

1. Mix the dry ingredients together
2. Add the wet ingredients and stir to combine
3. Spoon dollops onto a baking pan lined with parchment paper. Sprinkle flour on top and form them into flat balls. With a butt of a knife poke holes into the bagels
4. Brush with egg wash and sprinkle sesame seeds on top
5. Air Fry at 180 C / 350 F for about 10 minutes, or bake in the oven

Creamy Finnish Salmon Soup

Ingredients for 4 servings:
6 firm potatoes
2 carrots
3 1/3 cup water (8 dl)
1 fish stock cube
4 green onions, chopped
1 bay leaf
10 whole allspice
14 oz. / 400 g cubed salmon
3/4 cup milk (180 ml)
3/4 – 1 teaspoon salt
Handful of fresh dill

1. Peel and chop the potatoes and carrots
2. Add the water into a pot and bring to boil. Add the fish stock cube and stir. Add the green onions, bay leaf, whole allspice, potatoes and carrots and let simmer for about 15 minutes until the vegetables are almost cooked
3. Add the cubed salmon and milk and bring to boil. When the soup is boiling, remove from the stove and let the salmon cook under the lid for 3 – 5 minutes
4. Season with salt and stir carefully. Serve with chopped fresh dill

Apple Cinnamon Baked Oats Cups

for six servings:
2 1/2 cups oats (6 dl)
2/3 cup vanilla protein powder (1,6 dl)
2 eggs
1 cup high-protein Greek yogurt (2,4 dl)
1 cup milk of choice (2,4 dl)
2 – 4 tablespoons maple syrup
2 tablespoons peanut butter
2 tablespoons ground flaxseeds
2 teaspoons vanilla extract
2 – 3 teaspoons cinnamon
1 teaspoon baking powder

add ins: (save some for topping + cinnamon)
2 diced apples
1/2 cup chopped pecans (1,2 dl)

1. Mix all the ingredients together except the add ins
2. Fold in the diced apples and pecans
3. Spoon into greased muffins pan cavities
4. Sprinkle the rest of the apples and pecans on top
5. Bake at 180 C / 350 F for about 20 minutes
6. Store in an airtight container in the fridge
