HEALTHY GROUND BEEF SWEET POTATO BURGER BOWL
2 medium sweet potatoes
1/2 tablespoon olive oil
1 pound ground beef, 93/7
1/2 teaspoon garlic powder
2 heads of romaine lettuce, shredded or chopped
½ red onion, thinly sliced
1 small tomato, cut into chunks
1/2 cup dill pickle spears, sliced
Salt and pepper to taste
Healthy Burger Sauce
1/2 cup low-fat Greek yogurt
2 tablespoons ketchup
1 tablespoon pickle juice
1/2 teaspoon smoked paprika
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon salt
Preheat oven to 400°. Cut the sweet potatoes into one-inch cubes, or a bit thinner for fries, and place them on a large baking sheet. Drizzle with a half tablespoon of olive oil, and bake 20 minutes, flipping halfway through.
Season with salt and pepper as soon as they come out of the oven.
While the potatoes are baking, cook the meat. Add the ground beef to a cast-iron or nonstick skillet and heat over medium. Cook the beef, breaking it up as it cooks until it’s browned and no longer pink.
Make the sauce: whisk all the ingredients together in a small bowl, then set aside.
Assemble: Add the romaine to the bottom of a bowl, then top it with the cooked ground beef, sweet potatoes, onion, tomato, and pickles.
Serve the sauce on the side or drizzle it over the top and enjoy!
