Raspberry Coconut Bites
This makes about 8 bites:
1 cup frozen raspberries (240 ml / 130 g)
3/4 cup shredded coconut (180 ml)
1 – 2 tablespoons maple syrup or honey, to taste
Topping:
3 oz. / 80 g 80% dark chocolate
Shredded coconut
1. Put the raspberries, shredded coconut and maple syrup into a blender or food processor and mix until combined
2. Roll into balls or spoon dollops onto a plate lined with parchment paper
3. Let set in the freezer for 1 – 1.5 hours
4. Melt the chocolate in the microwave. Dip the bites in the chocolate, sprinkle shredded coconut on top and enjoy!
5. Store in the fridge or you can also store them in the freezer in an air-tight container, let defrost for about 20 minutes before serving
Snickers-inspired Stuffed Dates
6 dates
3 tablespoons unsweetened creamy peanut butter
3 pieces of 80% dark chocolate
Handful of peanuts, chopped
Flaky sea salt
1. Remove the pits from the dates
2. Fill the dates with the peanut butter and sprinkle chopped peanuts on top
3. Melt the chocolate in the microwave
4. Drizzle the chocolate on top of the dates
5. Sprinkle flaky sea salt on top
6. Let set in the fridge for 30 minutes and enjoy
7. Store in an air-tight container in the fridge
Viral Cottage cheese cookie dough
Ingredients for 4-6 servings:
1 cup cottage cheese (200 g)
2 tablespoon maple syrup
1 teaspoon vanilla extract
3/4 cup almond flour (180 ml)
1/4 cup oat flour (60 ml)
1 scoop vanilla protein powder (1/4 cup / 60 ml)
Pinch of salt
4 – 6 tablespoons dark chocolate chips
1. Add the wet ingredients into about blender and mix until creamy
2. Pour the mixture into a bowl and add the almond flour, protein powder and salt and stir
3. Lastly fold in the dark chocolate chips
