S’mores Frozen Hot Chocolate Inspired by Glace

Ingredients for about 8 servings of the marshmallow fluff:
2 egg whites (regular sized)
1/4 teaspoon cream of tartar
1/2 cup sugar (120 ml)
1/4 cup maple syrup (60 ml)
2 tablespoons water
1 teaspoon vanilla extract

1. Place egg whites and cream of tartar into a bowl and mix with an electric mixer for about 3-4 minutes until soft peaks form
2. Put water, sugar, and maple syrup in a small pot. Stir to combine
3. Insert a thermometer into the pot and heat over medium-high but don’t stir
4. Cook the syrup to 240°F /116°C. With the mixer running on medium speed, slowly pour the hot syrup into the egg whites in a thin, steady stream, avoiding the beaters. Once all the syrup has been added, increase the speed to high
5. Add in vanilla and whip until the fluff has cooled completely, about 7-8 minutes, or until the mixture is thick and fluffy
6. Use it as a hot chocolate/frozen hot chocolate topping and torch it until toasted!

For two big servings / 3 smaller servings of the frozen hot chocolate:
3 oz. 70% dark chocolate (85 g)
2 – 3 tablespoons sugar, to taste
2 tablespoons cacao powder
Pinch of salt
2 cups milk (5 dl)
1 1/2 cups ice cubes (3.5 dl)

1. In a bowl melt the chocolate in the microwave
2. Add the cacao powder, sugar and salt and stir. Slowly add 1/2 cup/120 ml milk while stirring at the same time
3. Pour the mixture into blender with the rest of the milk and the ice cubes and blend until smooth. Add more ice if you want it to be thicker
4. Serve immediately

For topping:
Whipped cream
Melted chocolate
