Pistachio Ice Cream
Ingredients for about 5 servings:
2 cups full-fat Greek yogurt, 5 – 6% (480 ml / about 500 g)
1 cup pistachios, unsalted (about 140 g)
3 – 4 tablespoons honey or maple syrup, to taste
1 teaspoon vanilla paste/extract
1 teaspoon lemon zest
Pinch of salt
Toppings:
Crushed pistachios
1. Add all the ingredients into a blender and mix until smooth
2. Pour into a container. Top with crushed pistachios. Freeze for about 4 hours, let sit at room temperature for 10-15 minutes before serving and enjoy!
Chocolate Peanut Butter Ice Cream
Ingredients for about 3 servings:
1 1/2 cups cottage cheese (about 300 g)
1 banana
2 tablespoons honey or maple syrup
2 tablespoons unsweetened cacao powder
2 tablespoons unsweetened peanut butter
pinch of salt
1. Blend all the ingredients together
2. Pour into a container
3. Freeze for about 3 hours, let sit at room temperature for 10-15 minutes before serving and enjoy!
Blueberry Pie Ice Cream
Ingredients for about 4 servings:
1 cup full fat Greek yogurt, 5 – 6% (250 g)
1/2 cup thawed frozen wild blueberries, drained to remove extra liquid (1.2 dl)
1/2 cup soaked cashews, roasted and unsalted (75 g)
3 tablespoons honey or maple syrup
1 teaspoon vanilla paste/extract
1 teaspoon lemon zest
1/2 teaspoon ground cardamom
1. Soak the cashews overnight or soak them in boiling water for 1 hour
2. Add all the ingredients into a blender and mix until smooth
3. Pour into a container. Freeze for about 4 hours, let sit at room temperature for 10-15 minutes before serving and enjoy!
