COTTAGE CHEESE PIZZA CRUST RECIPE
1 cup low-fat cottage cheese
1 tablespoon olive oil
1 cup all‑purpose flour, plus extra for dusting
1½ teaspoons baking powder
1/2 teaspoon sea salt
1 teaspoon Italian seasoning
½ teaspoon garlic powder
Toppings
1/3 cup pizza sauce
1/2 teaspoon dried oregano
3/4 cup shredded part‑skim mozzarella cheese
10 slices turkey pepperoni
Optional: parmesan cheese, red pepper flakes, garlic powder
Instructions

Place a rack in the center of the oven and heat to 450°F. Lightly oil a 9-inch metal cake pan. You can also use a pizza pan or baking sheet.

Blend the cottage cheese and olive oil until completely smooth.

In a medium bowl, whisk together the flour, baking powder, salt, Italian seasoning, and garlic powder. Add the cottage cheese and combine until a shaggy dough forms. It may be a bit sticky and crumbly, so use your hands to bring it together.

Transfer the dough out onto a lightly floured counter and gently knead it a few times, adding a little extra flour as needed, until it comes together into a ball.

Press or lightly roll the dough into a round roughly 9–10 inches across, about 1/3–1/2 inch thick.

Transfer the dough to the prepared cake pan, pizza pan or baking sheet and press it out to maintain that 9–10‑inch size, pushing it slightly up at the edges to form a higher rim like a pan‑pizza crust.

Bake the bare crust for 10–12 minutes, until it looks set and dry on top and lightly golden at the edges but still pale overall, then remove from the oven.

Once the crust has baked, pull it out and spread a moderate layer of the seasoned sauce over the warm par‑baked crust, leaving a small border around the edges. Sprinkle with oregano.

Sprinkle the shredded mozzarella evenly over the sauce, and then arrange the turkey pepperoni slices over the cheese.

Return the pan to the oven and bake for 10–12 minutes, until the cheese is melted and bubbly and the crust edges are golden brown. For extra browning, broil for 1–2 minutes at the end, watching closely.

Let the pizza rest 3–5 minutes on the pan so the cheese sets slightly and the crust relaxes, then sprinkle with grated Parmesan (if using), and red pepper flakes, slice, and serve.
