Apple Pancake Tacos
for two servings of the pancakes:
4 eggs
1 cup Greek yogurt (240 ml / 250 g)
2 teaspoons maple syrup
1 teaspoon vanilla extract
2/3 cups all purpose (gluten-free) flour mix (160 ml)
2 teaspoons baking powder
1/2 teaspoon cinnamon
for the cinnamon apples:
2 teaspoons butter
1 diced apple
1 teaspoon maple syrup
1/2 teaspoon cinnamon
Toppings:
Vanilla Greek yogurt/quark
Optional: maple syrup
1. Mix the wet ingredients together for the pancakes
2. Add the dry ingredients and stir to combine
3. Cook the pancakes on a non stick skillet for a few minutes on each side
4. Meanwhile add the butter to a pan, then add the diced apple, maple syrup and cinnamon and stir. Let cook on medium heat until the apples are fork tender
5. Top the pancakes with vanilla Greek yogurt/quark, the cinnamon apples and if you want some extra sweetness add a little bit of maple syrup
Recipe for My Gluten-free Pizza Crust:
1 1/2 cup water (360 ml)
0.4 oz. / 11 g / of instant dry yeast
2 teaspoons maple syrup/honey
1/2 – 1 teaspoon salt (to taste)
2 cups all purpose gluten-free flour mix that contains psyllium husk (480 ml)
2 tablespoons olive oil
1. Heat the water in the microwave till 42 Celsius degrees / 108°F (or according to the yeast package). Mix the yeast with the water
2. Add maple syrup and salt and stir
3. Add half of the flour and mix with a mixer for 2 minutes
4. Add rest of the flour and mix for 2 more minutes
5. Lastly add the olive oil and mix for 1 minute
6. Divide into two parts
7. Roll into round shapes and cut into the ghost and pumpkin shapes
8. Let rise for 30 minutes
9. Add your toppings
10. Bake at 220 C / 430 F without fan or at 200 C / 390 F with fan for about 15-20 minutes
