Starting Christmas early this year🎄😍 In this vlog we are cooking and baking cozy recipes, like Gingerbread French Toast Bake and Hot Chocolate with Homemade Marshmallow Fluff🤩 I’ll also decorate our apartment for the holidays! This is our first Christmas in this apartment, so I wanted to get everything set up early! We’ll have our Pre-Christmas Party next week and the theme is Christmas Cafe! In this video we’ll plan the menu for the cafe😋

Gingerbread French Toast Bake
Ingredients for four servings:
8 slices bread, cubed
6 eggs
1 cup milk (240 ml)
2 – 4 tablespoons molasses or maple syrup
1 teaspoon cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground clove
1/4 teaspoon nutmeg
optional: 2 scoops vanilla protein powder

optional topping:
berries of choice

1. Whisk together eggs, spices, syrup, milk (and protein powder)
2. Cut bread into pieces and place into a greased baking dish
3. Pour over the egg mixture. Make sure that the bread pieces are covered in the egg mixture. (Add the berries on top)
4. Bake at 180 C / 350 F for about 20-25 minutes
5. Serve with vanilla Greek yogurt/ quark for example!
6. Store in an air-tight container in the fridge
7. Reheat in the microwave

Marshmallow Fluff

2 tablespoons water
1/3 cup granulated sugar (80 ml)
1/3 cup maple syrup or honey (80 ml)
2 egg whites (regular sized)
1/2 teaspoon vanilla extract
1/2 teaspoon lemon juice

1. Put water, sugar, and honey in a small pot. Stir to combine.
2. Insert a thermometer into the pot and heat over medium-high but don’t stir
3. Place egg whites and cream of tartar in a bowl and mix with an electric mixer for about 3-4 minutes until soft peaks form
4. The syrup is ready when it’s at 115 C / 240°F. Remove from the heat, slowly and carefully pour the sugar syrup into the whites in a thin, steady stream while mixing at the same time
5. Continue to whisk for 7-8 minutes, or until the mixture is thick and fluffy.
6. Add in vanilla and whip until the fluff has cooled completely.
7. Transfer into an airtight container and store for up to 2 weeks at room temperature

Healthier Swedish Meatballs:

Ingredients for four servings:
1/2 cup milk (120 ml)
1/3 cup (gluten-free) breadcrumbs (80 ml)
14 oz. / 400 g ground beef
4 green onions chopped or if you don’t have IBS, replace with 1 small yellow onion finely chopped & 2 cloves garlic minced
1 egg
1/2 teaspoon allspice
1/4 teaspoon nutmeg1 teaspoon salt
½ teaspoon freshly ground black pepper

Oil for frying

Sauce:
2 – 3 tablespoons (gluten-free) all purpose flour
1 1/4 cup beef stock (3 dl)
1 1/4 cup milk of choice (3 dl)
1 tablespoon soy sauce
1/2 teaspoon ground black pepper
1 teaspoon dijon mustard
1/2 teaspoon rosemary

1. Mix together milk, breadcrumbs and spices and let sit for 5 minutes
2. Add the ground beef, egg, and green onions (or yellow onion + garlic) and stir. Let sit in the fridge for 15 minutes
3. Roll into balls
4. Heat a pan with a little bit of oil and add the meatballs, cook on medium heat with the lid, for a few minutes per side, until golden and fully cooked
5. When the meatballs are cooked transfer them to a plate, while you make the sauce (don’t clean the pan!). Add flour to the same pan, add the beef stock in two parts constantly stirring to prevent lumps from forming. Add the soy sauce, dijon mustard, milk and pepper and stir. Let simmer for about 5 minutes. Then add the meatballs and stir and let them heat up
6. Serve with mashed potatoes
