Turning My Apartment into Cozy Christmas CafešŸŽ„ I hosted my Pre-Christmas Party and the theme was Christmas Cafe! It was so fun! I baked all kinds of sweet and savoury treats, like Cake Pops, Xmas brownies, Focaccia and traditional Finnish Christmas recipes! I also made homemade marshmallow fluff for our Hot Chocolate Bar and we had Christmassy mocktails as well as drinks! A fun activity we did was gingerbread house decorating competition, it was so fun! Snowman Cake Pops
This recipe makes about 8 big snowman cake pops:
7 oz. / 200 g cream cheese
30 (gluten-free) Oreo-style cookies (about 340 g)

Toppings:
300 g White chocolate, melted
Dark chocolate, melted
Something orange for the nose, I used persimmon

1. Place the cookies into a food processor or blender and pulse until fine crumb
2. Roll into balls. Make 4 bigger balls and 4 smaller ones. Dip the tip of each cake pop stick into the melted white chocolate, then stick in the big cake balls, dip the tip of the sticks again and add the smaller balls on top. Place on a plate lined with parchment paper
3. Let set in the freezer for 1 hour
4. Dip in melted white chocolate. Use melted dark chocolate to make the eyes, mouth & buttons, and a piece of persimmon for the nose.
5. Store in the fridge!

Christmas Brownies
Ingredients:
3.5 oz. butter, melted (100 g)
1 cup sugar (240 ml)
2 eggs
1 teaspoon vanilla extract
1/3 cup unsweetened cacao powder (80 ml)
1/4 cup all purpose (gluten-free) flour (60 ml)
1/4 teaspoon baking powder
pinch of salt

frosting:
1 cup whipping cream (240 ml)
3.5 oz. cream cheese (100 g)
1/4 – 1/3 cup powdered sugar, to taste (60 – 80 ml)
1/2 teaspoon vanilla extract

add ins:
For the chocolate frosting: 1 – 2 teaspoons cacao powder
For the green frosting: pinch of matcha/a few drops of green dye

toppings:
chocolate chips
shredded coconut
persimmon
sugar eyes
sprinkles
mini pretzels
cranberries

1. In a bowl whisk together melted butter and sugar for about 1 minute
2. Add the eggs and vanilla extract and whisk again for 1 minute
3. Add cacao powder, flour and salt and stir to combine
4. Spread the batter into a small greased round springform cake pan. Bake at 175 C / 345 F for about 30 minutes
5. Let the brownies cool down
6. Beat whipping cream in a mixing bowl until peaks form. In another bowl mix together cream cheese, sugar, and vanilla. Then fold in whipped cream.
7. Divide the frosting into three bowls. Add cacao powder to one bowl and matcha/green dye into one bowl and stir
8. Use piping bags to decorate the brownies, add the toppings and enjoy!

Marshmallow Fluff
2 egg whites (regular sized)
1/2 teaspoon lemon juice or cream of tartar
1/3 cup granulated sugar (80 ml)
1/3 cup maple syrup or honey (80 ml)
2 tablespoons water
1/2 teaspoon vanilla extract

1. Place egg whites and lemon juice/cream of tartar into a bowl and mix with an electric mixer for about 3-4 minutes until soft peaks form
2. Put water, sugar, and maple syrup/honey in a small pot. Stir to combine.
3. Insert a thermometer into the pot and heat over medium-high but don’t stir
4. The syrup is ready when it’s at 115 C / 240°F. Remove from the heat, slowly and carefully pour the sugar syrup into the whites in a thin, steady stream while mixing at the same time
5. Continue to whisk for 7-8 minutes, or until the mixture is thick and fluffy.
6. Add in vanilla and whip until the fluff has cooled completely
