Eoin Flanagan, owner and director of Irish hospitality business Siam Thai Group, is overseeing a period of investment and redevelopment across the restaurant group and its recently renovated Candlelight Bar.
The second-generation family business operates three Siam Thai restaurants in Rathmines, Malahide and Dundrum, employing around 150 people across its venues.
The business was established in 1993 when Flanagan’s father, Peter, opened the first Siam Thai restaurant in Malahide after being inspired by a trip to Thailand.
Flanagan and his siblings grew up working part-time in the family restaurant, with Eoin becoming increasingly involved while studying engineering at university.
After completing his studies, he and his sister Julie joined the business full-time before succeeding their father.
In his twenties, Flanagan helped modernise Siam Thai’s dining experience while retaining the authentic Thai cuisine and hospitality that had established its reputation.
He now takes a hands-on role in the operation and development of the group, overseeing venue design, customer experience and the evolution of its restaurant and bar offerings.
The redevelopment of Siam Thai Rathmines marked a significant investment for the business, with Flanagan working alongside interior architects O’Donnell O’Neill to develop the venue’s design.
The revamped restaurant features a circular bar and sculptural centrepiece, with the design subsequently influencing the evolution of the group’s other locations.
The aim is to create a consistent Siam Thai identity across the restaurants while allowing each venue to retain its own character.
Alongside the restaurant business, Flanagan has continued to develop the Candlelight Bar, responding to changing customer habits by extending the experience beyond dining to include cocktails, music and late-evening socialising.

His approach centres on balancing the traditions of a family-owned hospitality business with contemporary design and changing expectations among customers.
The group’s continued investment reflects an effort to maintain its established reputation while adapting its venues and offering for a new generation of diners and hospitality customers.
