The secret is to whisk in egg whites while the oats cook, which creates the perfect texture without changing the flavor at all.

It is one of my favorite breakfast ideas for busy mornings when I want something nutritious that feels like a treat. 1/2 cup (40g) rolled oats
1/2 cup (50g) apple, chopped small
1 cup water
1/4 teaspoon cinnamon
A pinch of sea salt
1/3 cup (80g) egg whites
Optional toppings: chopped apples, walnuts, cinnamon, and/or maple syrup

Instructions
Combine the ingredients. Add the oats, chopped apple, water, cinnamon, and sea salt to a small saucepan. Stir to combine.

Cook the oatmeal. Bring to a gentle simmer over medium-low heat and cook for about 5 minutes, stirring occasionally, until the apples and oats are tender and most of the water has been absorbed. Avoid letting the oatmeal come to a rolling boil.

Add the egg whites. Slowly pour in the egg whites while continuously stirring. Continue cooking and stirring for 1-2 minutes, or until the egg whites are fully incorporated and cooked through, and the oatmeal is thick, fluffy, and creamy.

Serve. Transfer to a bowl and add your favorite toppings. I love a drizzle of maple syrup, a few extra apples, chopped nuts, and an extra sprinkle of cinnamon. Enjoy!

Microwave Method
Combine the oats, apples, water, cinnamon, and sea salt in a large microwave-safe bowl. Microwave on HIGH for 1 minute.

Remove, stir, and microwave for another 30 seconds.

Remove, stir again, and then slowly pour in the egg whites while stirring continuously until well incorporated.

Microwave for another 1 minute, then stir well. If needed, microwave for an additional 15–30 seconds, or until the egg whites are completely cooked through and the oatmeal is light, fluffy, and creamy.

Tip: Use a larger bowl than you think you need! The oatmeal will puff up as it cooks, especially after adding the egg whites.
