How to Make Homemade Ice Cream Without a Machine

The base ice cream recipe:
5 cups / 1.2 liters heavy cream
two 14-ounce / 397 g cans of sweetened condensed milk
2 tablespoons vanilla extract or paste
1. First, whip the cream
2. Once it’s nice and fluffy, fold in the condensed milk and vanilla extract. If you wanted to make plain vanilla ice cream, you could simply transfer it to containers at this point and freeze it for about 6 hours. But since we’re making three different flavors today, so we’re going to divide the mixture evenly between three bowls
Nutella Ice Cream
For the Nutella ice cream add:
1/4 cup / 4 tablespoons dark chocolate chips
3 – 4 heaped tablespoons of Nutella
1. Fold in the chocolate chips to the cream mixture
2. Heat the Nutella in a microwave for about 30 seconds to thin out the Nutella a little
3. Pour half of the ice cream mixture into a big container. Drizzle half of Nutella on top. Spoon the rest of the ice cream on top and drizzle the rest of Nutella on top. Use a knife to make a swirl
4. Freeze for 6 hours
Strawberry Swirl Ice Cream
For the strawberry swirl:
2 cups / 340 g strawberries
4 tablespoons sugar
1. Put the strawberries and sugar into a small pot and let simmer over medium heat for about 10 minutes until the mixture thickens
2. Place into the fridge to cool down, while you beat the whipping cream until you have soft peaks
3. Add the condensed milk and vanilla stir until combined
4. Working in layers, add ice cream and top with the strawberry swirl mixture, alternating as you go. Once all ice cream has been packed, use a knife to make swirl patterns
5. Freeze for 6 hours
Mango-Passionfruit Ice Cream
For the mango flavor add:
1/2 cup / 120 ml mango puree
Pulp of three passion fruits
For optional decorations:
4 tablespoons mango puree
1. Add the mango puree and passionfruit pulp into the bowl with the cream mixture and stir
2. Pour half of the ice cream mixture into a big container. Drizzle mango puree on top. Spoon the rest of the ice cream on top. Drizzle the rest of the mango puree on top and use a knife to make a swirl
3. Freeze for 6 hours
